One with actually flavourful rice. I know Bismillah gets a lot of flak, especially with their association with the Michelin Guide, but their rice is actually nice. Their proteins are rubbish though and the prices are high. Most friends I know recommend Biryani places with the rice not tasty and also drenched in curry. I feel this defeats the purpose of eating a biryani.
So what you like is called Dum Biryani, which is what Bismillah does. The spiced meat is layered with the rice, sealed and slow cooked, so the rice becomes very flavourful. If you don't want biryani drenched in curry, always order Dum Biryani. The Spice Adda has very nice biryanis.
You'd be surprised how many places market themselves selling dum biryani with the curry the ONLY Flavour vehicle.
Ambur star biriyani does a variant with short rice (not the long basmati rice). It’s a different flavour and the missus swears by this. I still prefer a more Pakistani / hyderabadi biriyani type, which is what you appear to be describing. I vote for Al Tasneem (near Arab street), among the very many worthy contenders.
